'Lunch with Leo:' USU Researchers Exploring Nutritional Pathways to Health

The Utah Science, Technology and Research Initiative and The Leonardo are holding a science lecture and luncheon Wednesday, Feb. 18 at noon. Open to the public, “Lunch with Leo” will feature Utah State University researchers David York and Michael Lefevre of USU’s Center for Advanced Nutrition.

CAN aims to understand the mechanisms through which diet impacts health and disease from the level of the gene to the whole individual. The center focuses on the modern scourges of obesity, type II diabetes and cardiovascular disease and neurodegenerative diseases of aging such as Alzheimer’s.
 
Understanding nutritional effects provides opportunities to identify biomarkers for health and disease, and the discovery of new targets for pharmacotherapy. The science of nutrition promises to expand the development of new tests and products, and to shape nutritional approaches to prevent disease.
 
The luncheon presentation “Are you what you eat or what your genes condemn you to?” will facilitate a wide-ranging discussion of diet. York and Lefevre will explore myths and breakthroughs around the individual choices in what humans eat and how they respond to diets. The duo will discuss how nutritional science may influence health and disease in the future.
 
Fresh fruit, vegetables, lean meats and whole grains will be provided for all to enjoy.
